That sounds like a tough brief. I recently had to create a project based around a journey of discovery of which I did a monopoly board for an art foundation course.
Why not do a video related more about yourself and not why you should be admitted. Afterall, you should be admitted because of who you are and not just because of your skills. Maybe showcase an unusual hobby? Or do something so different to what they expect but in there is a hidden meaning. I think the more unique the idea, the more they will remember who you are and also shows you think outside of the box
